Enzymes are used in many aspects of food production, both on an artisan level and large scale manufacturing. An enzyme is a protein molecule that is a biological catalyst. The three main functions of an enzyme are:
1. Increase the rate of the reaction
2. Enzymes act specifically with only one substrate to produce outcomes. This is why if a human is missing one enzyme the outcome can be disastrous.
3.Enzymes are regulated from a state of low activity to high activity and vice versa
