The various numbers after the name denote the source of the starch and the modification that has taken place. For example Ultra Tex 3 is the same modification but the starch comes from tapioca rather than corn.
Ultra Tex 4 is used in instant food preparations, pastry fillings, sauces and dressings. The ability to create instant sauces from any liquid in a cold environment, with a rich smooth mouth feel, is gaining great popularity from Chefs worldwide. These sauces can then be dried to form sauce sheets.
What is the recommended use ratio for Ultratex-4?
An excellent starting point for your first test batch would be the following:
Glazes 2-3%
Dessert sauces 3-4%
