Low Methoxyl (LM) Pectin has an ideal pH range of 2.8 to 6.5. The setting temperature will vary depending on the calcium present in solution. This can be buffered with calcium irons. A suitable starting range would be 40mg of calcium per 1 gram of pectin. A lot of manufacturers will combine this pectin with LBG (locust bean gum) to obtain synegistic effects.
LM pectin is a specialist pectin and may require some experimentation to obtain the results you require.
