What does guar gum do?
Guar is a white free flowing powder. Completely soluble in hot or cold water to form a tasteless, odorless non toxic solution. Guar gum powder has 5-8 times the thickening power of starch. For this reason it is mainly used as a thickener and emulsifier in food products

A water soluble powder obtained from plant mucilage (Cyanopis tetragonoloba).
Uses
Pharmaceuticals - binder in tablet mixtures, thickener and emulsifier in food products for example cheese spreads, ice cream and other frozen deserts. The resulting water solution is pretty much tasteless, odourless and non toxic.
The water soluble portion, 85%, is called guaran and consists of
35% galactose,
63% manose
5-7% protein.
