Glucono delta-lactone (GDL) is a naturally-occurring food additive (E575) used as a sequestrant, an acidifier, or a curing, pickling, or leavening agent. Pure GDL is a white odorless crystalline powder. Glucono-delta-lactone, upon addition to water readily forms an equilibrium mixture of the lactone GDL and gluconic acid.

Bought some of this to make TOFU at home with my teenager. It was a small amount so not a real major investment if it all went to billyo. It worked well but we should have also got the Calcium Sulphate to make the harder tofu style.
