This water soluble Natural Carmine (E120) powder is a deep reddish magenta to violet colour depending on pH.

An example of using this natural carmine powder to match the famous Campari red by Vagabond Cocktail Company.
The idea of doing a non alcoholic version of a "Campari" had been on our back burner for long enough. The decision was made to start scouring the internet on where to source cochineal. It wasn't easy, then we found out it is also known as Carmine. Having grabbed ingredients from Melbourne Food Depot previously for another Vagabond Cocktail Company project it was our first stop. We went online and purchased the Carmine and a little bit of Gentian root to finish off what we were missing. Seeing we had all the ingredients we decided to go and make some.
Without giving away the whole production process, spices were toasted along with other botanicals and used to infused into water. We then colour matched our non alcoholic "Campari" side by side with the real Campari and wasn't happy with the clarity so we then fined it by using egg whites. Once it cooled down it had the clarity we were looking for and pretty close colour match done by eye, next batch the recipe will be tweaked just a tiny bit to obtain even a closer match. As can be seen from the comparisson photo, we are pretty happy with the result.
